Date and Almond (or Peanut) Balls

This is probably one of my favorite recipes of all time! Maybe because this is kind of like a snack, kind of like a dessert and kind of like a pre-workout energy booster. Or kind of like all three in one! And it is SOOOO easy. I keep these on hand at all times so I always have a healthy snack or treat around. My daughter loves them, too, and it is a great way to sneak in some fiber and healthy fats if your kids are picky like mine. There are so many variations on this, but this is the basic recipe you can tweak by using almonds or peanuts.

Ingredients:

1/2 c Almonds or Peanuts
1 c Medjool Dates (pitted)
2 Tbs Almond butter or peanut butter
1 Tbs Cocoa Powder
1 Tbs Coconut oil
1-2 Tbs Flax seeds
1-2 Tbs Chia seeds


Preparation: 

Add the nuts to a food processor and pulse a few times. You want there to be some texture, so don't overdo it, but make sure most nuts are finely chopped.

Add dates (make sure they are pitted), coconut oil and nut butter. Blend until dates are mixed well. Add more coconut oil or nut butter if needed.

Add cocoa powder and pulse again to mix. Once you have the consistency you like (should be thick and pliable), add your seeds. Pulse a few more seconds, then roll into balls.

Place balls in an airtight container and place in the freezer for about an hour. Take them out and they're ready to enjoy! I store mine in the fridge and they last several weeks (if you can keep them that long)!
